Weight out your coffee and grind it
Place the folded filter into the Chemex, then pre-wet with hot water to remove papery taste and to pre-heat your vessel

Discard the hot water and add your coffee to the filter
Give it a shake to make sure everything is evenly distributed

Add around 50ml of water from the pouring kettle , just enough to saturate the coffee but not enough that it is going to bleed through the filter
Let it rest for 30 seconds
Using the pouring kettle, begin to add water, start by pouring in small, slow circles from the centre spiralling out to almost the edge then spiral back in to the centre
When the water level drops, resume pouring

It should take around 3 minutes for the brewing time
If it takes longer you may need to adjust your grind if it’s taking too long grind it coarser, too quick and lacking flavor grind it finer
